Okay… So… Why do I call this “surprising pumpkin bread recipe”?
Well… truth is, I made this recipe, and when I tried it I thought it was okay. I wasn’t blown away by it. And that usually means no one else in my family will like it. Even if I like something, my family might not… And sure enough, my husband felt the same way. But the girls. Oh the girls, they loved it!!!
First to back up… Sophie, our 5.5 year old has been taken off of chocolate for the duration of a homeopathic treatment for her ear. And basically, all snack items she’s used to have chocolate. Zbar. Belvita breakfast biscuit. Power O cereal. Almonds, cashews & dark chocolate mix. Chocolate zucchini bread. EVERYTHING, I’m not even kidding. So now I have to figure out snack items I can bake that are semi healthy and have no chocolate. So this pumpkin bread was my very first try.
So back to the surprising pumpkin bread. The girls loved it, ate ALL OF IT, sometimes with strawberry jam (the only way my husband and I could eat it) but mostly without. So this recipe is toddler and kid approved. 🙂
2 cups cashews
1 cup walnuts
4 large eggs
1 cup liquid egg whites
3/4 cup pumpkin puree
2 tbsp coconut sugar
1/3 cup coconut flour
1/3 cup whole wheat pastry flour
1 tbsp apple cider vinegar
1/4 cup maple syrup
1.5 tbsp pumpkin spice
1.5 tsp baking powder
0.5 tbsp vanilla extract
Pinch of salt
1. Preheat oven to 325F
2. Add cashews, walnuts, eggs, egg whites, pumpkin puree, sugar and maple syrup to a high power blender and blend until all mixed together
3. Add remaining ingredients, blend well
4. Line a bread loaf with parchment paper, pour over batter
5. Bake for ~55 minutes, until toothpick inserted comes out clean
